Sweet & Moist pudding. You can add 4 tbsp of chopped stem ginger to the mix if you like.

Instructions

    Butter the pudding dish/bowl. Place 2 tbsp of syrup in the bottom of the bowl.

    Place 2 tbsp water, 30g butter, white sugar & syrup in a pan. Bring to a boil until sugar is dissolved. Put 3 tbsp of syrup in bottom of the bowl.

  3. Sift together the flour, ginger & baking powder in a separate bowl.

    Cream the brown sugar & 150 g butter together until light & fluffy.

    Add the eggs, one at a time. Mix well.

    Add the flour mixture & milk alternately.

    Pour mixture on top of the syrup.

    Place baking paper & foil lid on top. Place in a pot of hot water and cover. Simmer for 1 hr 30 mins until Sponge feels firm.

    Tip the pudding out & top with remaining syrup.

    Serve with custard or Icecream
