Add water to pot and cook brown rice pasta until al dente.
Whilst noodle are cooking dice the tofu and shallow fry in a frying pan until cooked to your like. Turn tofu as it cook so it doesn’t stick.
Put pot back on heat with drain pasta, add stock peas and red pepper. Simmer for a few minutes until everything is warm.
Stir in coconut milk and tamari.
Divide into two bowls.
Top with tofu, cilantro, lime wedges and a sprinkle of dried chilli flakes.
