The saltiness of the bacon plus the stinky-ness of the blue cheese plus the sweetness of the grapes makes for a salad that's yum!
Hard boil eggs. Peel. Set in fridge to chill.
Between two salad bowls, divide spinach, grapes and blue cheese.
In a small bowl, whisk together dressing ingredients.
In a skillet over medium heat, cook bacon. Remove slices from heat, chop and add to salads. Reserve 1 tablespoon of drippings; whisk into dressing.
Cut hard boiled eggs in half and add to salad. Drizzle with dressing, serve immediately.
