You Will Need (10 things)

  • 550-600 Mascarpone Cheese at room temperature
  • 1-1,5 Pumpkin Puree
  • 1/2 Powdered Sugar
  • 1 Vanilla Extract
  • 1-2 Pumpkin Spice to taste
  • 1/2 Ground Cardamom
  • 300 Brewed Coffee strong
  • 1/4 Rum preferably dark
  • 300-350 Savoiardi Cookies
  • 3 tbsp Cacao Powder dark

Steps (6 steps, 35 minutes)

  1. 1

Place the mascarpone in a large bowl and using a hand mixer, beat at low speed, 30 seconds. Add the pumpkin and vanilla, and continue beating until incorporated about 30 seconds.

  2. 2

Stir in the powdered sugar and spices and beat at low speed just until combined. Try and adjust to your taste (You may wish to add more powdered sugar, spices, or even pumpkin pure).

  3. 3

In a medium bowl combine the coffee and rum (Try adding other alcohol; Amaretto or Kahlua might be even more interesting!)

  4. 4

Take a large trifle bowl (or any other deep bowl) and place some mascarpone cream on the bottom. Dip one cookie into the coffee and place on the mascarpone. If you like a drier version, dip a cookie for a second, if you prefer a moister version (like this one), keep it in the coffee longer, 3-5 seconds. Repeat until you have the layer of cookies.

  5. 5

Over the cookies spread a good amount of the mascarpone. Repeat layers until you use all ingredients. The last layer should be the mascarpone.

  6. 6

Refrigerate for at least few hours or better overnight. Sprinkle with the cocoa powder before serving. Enjoy!
