This is a moist cake with tons of flavour.

I split the mixture & only added nuts to half, as my boy doesn't like nuts.

It will make 2 x 8" cakes.

You can frost & sandwich the cake or serve it with custard or ice cream.

It is very versatile.

You Will Need (12 things)

  • 3 cup Plain Flour
  • 2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt
  • 1 tsp Bicarbonate Of Soda
  • 3 Eggs
  • 1 cup Oil
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1 tsp Vanilla
  • 3 cup Apples Grated
  • 1 cup Pecan Nuts Chopped

Steps (8 steps, 60 minutes)

    Pre Heat oven 350/180 degrees.

    Beat oil & sugars together until combined.

    Add eggs, one at a time.

    Add the vanilla.

    Beat until incorporated.

    Combine the remaining dry ingredients together.

    Add the dry ingredients to the wet ingredients in 3 lots.

    Mix until combined.

    The mixture will be quite dry.

    Add the apples & nuts.

    Stir to combine.

    Pour into tin & bake for 40-45 mins until cooked through.

    Remove from oven & allow to cool completely.

    Cut & serve with custard or ice cream.

    You could also frost the cake & serve with a nice cup of tea.
