I live in Bristol which is nestled between North Somerset and South Somerset. This area is known for it's delicious cider and recipes from this part of the world use cider in many imaginative ways to flavour both savoury and sweet dishes. Here is a traditional cider cake with a somerset twist. We sourced Somerset cider and locally produced apples to make this

You Will Need (8 things)

  • 8 oz / 225 g Sultanas
  • 8 oz / 225 g plain White Flour
  • 1 Heaped tsp / 10ml Bicarbonate Of Soda
  • 2 Large Eggs
  • 4 oz / 115 g soft Brown Sugar
  • 4 oz / 115 g Butter
  • 2 Large cooking Apples (e.g. bramleys)
  • 280 ml dry farmhouse Organic Apple Cider Or

Steps (11 steps, 80 minutes)

    (The night before)
    Soak the sultanas overnight in the cider and take the butter out of the fridge to soften.

    The next day, gather together your remaining ingredients.

    Pre-heat the oven to 180°C

    Grease an 8 in / 21 cm square cake tin with a little butter

    Cream together the butter and sugar until smooth

  4. 4

    Add the eggs and mix together well

  5. 5

    Sift together the flour and bicarbonate into a large mixing bowl

    Add half of the flour and bicarbonate to the other ingredients and beat together

    Peel, core and slice the apples

    Add in the sultanas and cider to the other ingredients, then add this to the remaining flour and bicarbonate and mix together well.

    Layer the apple in the bottom of the tin, cover quickly with the cake mixture and place in the pre-heated oven. If the mixture is left sitting around, the cake will not rise.

    Bake for 45 min - 1 hr, checking with a skewer. Once cooked, cool in the tin for 30 minutes, then turn out onto a wire rack or plate to cool completely.
