Snow Peas, Asparagus, and Onions Saute
½ pkg (8oz) of frozen asparagus spears - cut into 1 ½ in lengths
½ pkg (8oz) of ready to eat snow peas, stringed
½ small red onion - sliced thinly into spikes by cutting in half and then downward against the rings in wedges.
2 tsp olive oil
2 tbsp minced fresh garlic
Salt to taste
¼ c lemon juice
Saute medium high in a skillet the oil, onion, peas, salt and asparagus until the asparagus changes to a more olive green and the peas become a brighter green. Add the garlic and sauté for 1 to 2 minutes. Add the lemon juice and sauté just long enough for it to mostly evaporate. Serves 4 as a side dish or 2 as an entrée.
