Shrimp & Noodle Okonomiyaki

Cook up a tasty Japanese pancake

We discovered okinomiyaki while we were in Hiroshima and loved watching it being cooked fresh in front of us. It's somewhere between an omelette and a Japanese pancake and you're encourages to add any ingredients that you like to it - so feel free to get creative!

You Will Need (12 things)

  • 200 g Shredded Cabbage
  • 100 g Flour
  • 100 g Vegetable Stock
  • 100 g Straight-to-wok Noodles
  • 2 Eggs
  • 2 tsp Pickled Ginger
  • 50 g Grated Potato
  • Handful of chopped Spring Onions
  • Handful of shrimps
  • Wasabi Mayonnaise
  • Teriyaki Sauce
  • Seaweed flakes

Steps (6 steps, 20 minutes)

    Whisk together the eggs, vegetable stock and flour until smooth.

    Mix in the spring onions, grated potato, pickled ginger and season with salt and pepper.

    Mix in the cabbage, noodles and shrimps.

    Pour half of the mixture in to a frying pan and cook for about 5 minutes until golden on the bottom.

    Now for the scary bit... flip the okinomiyaki over, like you would with a pancake and cook the other side for a further five minutes.

    Serve hot with a generous serving of teriyaki sauce, wasabi mayonnaise, seaweed flakes (I just blended a sheet of nori) and some fresh spring onions.
