A Shrewsbury cake or Shrewsbury biscuit is a classic English dessert, named after Shrewsbury, the county town of Shropshire. A Shrewsbury biscuit normally has lemon or orange zest in the recipie or added dried fruit.

When i was younger, my mum used to make these with chocolate chips in them and would cut the dough into teddies and dip the bottom half in chocolate. As Shrewsbury is the town of flowers, i thought it would be fitting to use Rose water in my dough to give that flowery smell and taste. Rose water is an acquired taste so if you dont like it, go the traditional way of lemon or orange zest instead.

You Will Need (8 things)

  • 8 oz Plain Flour
  • 4 oz Caster Sugar
  • 4 oz Butter or Margerine
  • 1 tsp Baking Powder
  • ½ tsp Caraway Seeds
  • ¼ tsp Nutmeg or Mixed Spice
  • 2 tsp Rose Water
  • 1 Egg

Steps (6 steps, 80 minutes)

    Gather all your ingredients and weigh everything according to the material list. Preheat your oven to Gas mark 5 and on a baking tray grease the grease proof paper ready for baking.

    Sift flour, baking powder nutmeg (or mixed spice) in a bowl, Add the caraway seeds and sugar so all your dry ingredients are together.

    Add the butter to the dry ingredients and rub it in so it almost looks like bread crumbs. Add the egg and rose water to it and mix till you make a dough (i added a bit more flour as it looked too wet).

    Spread Flour on your board and put the dough on it. Work the dough just a bit more so it doesn't stick. Start rolling the dough out and cut into biscuit shapes. I had cut large ones and went a bit too thick on the biscuits. I changed the rest of the dough to small ones.

    Put the cut out biscuits onto the greased baking trays, Make sure they are evenly spaced and put them in the oven.

    I ended up using 3 trays in the end. Says to cook them between 10-20 mins, but i baked them till they were just starting to very lightly brown on the top.

    Let them Cool down completely and then ENJOY!!
