Seitan Crab Salad

Vegetarian friendly crab salad with seitan, fennel and tarraon

You will need

100 g Seitan ½ Cucumber 1 Bulb Fennel 2 Sticks Celery Olive Oil A fresh bunch of Tarragon Salt and Pepper 1 Lemon 4 tbsp Mayonnaise

Instructions

1. 

   First of all peel and chop the fennel, along with the cucumber and celery.

2. 

   Toss together in a bowl and tear in some tarragon leaves.

3. 

   Drizzle with a little olive oil.

4. 

   Season with salt and pepper.

5. 

   Tear in the seitan.

6. 

   Add the mayonnaise and squeeze in the lemon juice.

7. 

   Mix together and serve with a little more black pepper.
