Great one dish cooking. You can feed a big family gathering with this or freeze it into portions for a quick meal. You can use any veg you like in this dish. You can replace the stock with wine if you like.

Instructions

1. 

   Heat oven 200 degrees. Cut the vegetables. Place all ingredients into a tray & sprinkle with oil, salt & pepper.

2. 

   Place in the oven for 30 mins. After this time remove & stir around. Add stock. Return to oven for 30 more mins until all items are cooked.

3. 

   Serve
