Keep an eye on the coconut as it burns easily.
Heat oven 175 degrees.
Cream together butter & sugar.
Add egg & vanilla.
Add flour & salt.
Press into a tray.
Bake for 20-25 mins.
Allow to cool.
Toast the coconut...
Place coconut on a tray.
Bake for 10-15 mins stirring throughout.
Melt together the caramels, milk & salt.
Stir in the coconut.
Spread over the base.
Allow to set.
Cut into squares.
Dip base of cookies into chocolate.
Drizzled the remaining chocolate over the top.
