I can not cook, but I can bake, the running joke is I need to marry someone who can cook other wise I will live off of sugar and cake batter for my entire life, then I discovered muffins and realized they can be more than just a dessert, then can be a healthy entree! My Boyfriend and I created this recipe from one that was not budget friendly/not to my liking. The original called for pepperoni, and sun dried tomatoes. I do not like tomatoes. Not to mention Sun dried tomatoes and pepperoni are expensive. So we got Salami and Mild Cheddar. I added in Garlic like the original suggested but since we didn't have a garlic press I would occasionally hit a pocket of garlic which was not to yummy. Also Sandwich Sprinkle is something from a local spice shop so I don't know if it is easily obtainable else were, try oregano or your own blend! So Enjoy these muffins!

Instructions

    Gather You cooking utensils. A Cheese Grater/Whisk/Spatula(child cheater)/Large Spoon/Large Mixing Bowl Smaller Mixing Bowl/Muffin Tin (12) / 1cup/.5 cup/.8 tsp/1 tbsp

    Gathering Your Ingredients Salt/Eggs/Buttermilk/Baking Powder /Olive Oil/Flour/Salami/Mild Cheddar Cheese/Sandwich Sprinkle (or any spice you like)/Garlic Clove (OPTIONAL!)

  3. PreHeat the Oven to 400 degrees Grease your Muffin Tins with pam, crisco or butter. OR Line your muffin tin with paper liners

  4. Start Measuring your Dry Ingredients and put them into the large mixing bowl. 2 cups of Flour, 1 tbsp baking powder, 1/8 tsp salt, 1 tsp of sandwich sprinkle or other spice (Oregano works too) Whisk till you get the effect of sifting (or just sift it all together) Now add the 1.25 cups of mild Cheddar, and the 3.5 oz of salami

  5. In the small mixing bowl mix your wet ingredients. Beat the 2 eggs lightly then add 1 cup of buttermilk,6 table spoons of olive oil. (and the crushed garlic clove)

  6. Make a well in the dry ingredients and pour the liquid ingredients into the well and stir in till mixed (Do not over mix) Spoon the Batter into the 12 cup muffin tin and bake for 20 Minutes, or Until golden brown.
