These are pink vanilla flavoured cupcakes (even though I forgot to add vanilla essence!) with yellow lemon flavoured cream cheese frosting. The recipe makes 12 cupcakes. This was the first time I made cream cheese frosting and I don't really know what to make of it. I like it but it's weird! The outside of the cupcakes look more peach than pink because they just didn't look ready before they went peach. I made them for Mother's, I've been very Spring themed lately.

Description

These are pink vanilla flavoured cupcakes (even though I forgot to add vanilla essence!) with yellow lemon flavoured cream cheese frosting. The recipe makes 12 cupcakes. This was the first time I made cream cheese frosting and I don't really know what to make of it. I like it but it's weird! Instructions

  1. Pre heat oven to 200*C and cream butter and sugar.

  2. Add eggs and flour gradually, add the vanilla essence and a drop of red food colouring.

  3. Put cupcake cases into a tray and spread the mixture out into each case. Bake for 20 mins.

  4. For the frosting: Beat the icing sugar, butter and cream cheese together. The original recipe: http://www.cupcake-creations.com/lemon-cream-cheese-frosting.html called for 12 ounces of icing sugar as far as I could work out. I only put 8 in and a bit more after taste tests.

  5. Add the lemon rind. I had never grated a lemon rind before and I gave up quite quickly so with the tiny amount I managed to get off the lemon I also added splashes of Jif lemon juice. Not as lemony as I would have liked but it's alright.

  6. Wait for the cupcakes to cool and do the washing up and then add the frosting. I don't have any piping stuff so I just slap it on with a spoon and then wiggle the spoon about. aaand done!
