This is a really nice soup.

Roasting the veg makes all the difference to the flavour.

You Will Need (6 things)

  • Butternut Squash
  • Red Pepper
  • Onion(s)
  • Garlic
  • Olive Oil
  • Vegetable Stock

Steps (6 steps, 120 minutes)

    Peel & chop all veg.

    Place in a roasting tin with a drizzle of oil.

  3. 3

    Cook in oven 200 degrees for approx 60 mins, until veg are soft.

    Stir the veg a few times throughout the cooking time.

    Add veg to a pot.

    Cover with veg stock.

    Simmer for approx 30 mins.

    Blend soup.

  6. 6

    Serve.
