Iced rhubarb - a wonderful, cool drink for summer afternoons
Serves 2

This recipe is tart, cool and refreshing.

  • Step 1

    Cut the rhubarb into finger-length pieces.

  • Step 2

    Add to a pot with the water and bring to a boil.

  • Step 3

    Simmer for one hour on low heat.

  • Step 4

    Strain and add honey.

  • Step 5

    Allow to cool.
    Serve with ice and something green (mint leaves / lime wedge) as garnish.

I feel like such a dork, asking this but I am really out of my element in a kitchen. Could you please tell me about how much rhubarb to 2 cups of water and about how much honey? My husband loves rhubarb, and I'd love to make this for him and surprise him with it.

We have a crapton of rhubarb in out backyard. I plan on making some of this soon. Happy Never would have thought of it.

Okay - the list of ingredients went askew - you need:
2 stalks of rhubarb
2 cups of water
1 tsp honey
lots of ice
something green as garnish
