Need a last minute gift? Keep a batch of these cookies in your freezer, bake when you need them and pop them in an origami box for a super cute gift that anyone will love to munch.

Instructions

    Whisk together the butter, sugar and egg.

    Whisk together the flour, salt and baking soda and then mix in to the butter. Knead to form a thick dough and then separate into two balls.

    Add the cocoa, red food colouring and strawberry essence to one dough ball and mix in. Add the lemon flavouring and yellow food colouring to the other dough ball and mix in.

    Separate each batch of dough into 3 balls and wrap each in cling film. Pop in the freezer for 10 minutes.

    Unfold the cling film and sprinkle the top of the lemon dough with with flour. Roll out into a

    Roll out the red doll ball too so that the two sheets of dough and roughly the same size.

    Carefully lift the red dough sheet and place it on top of the lemon dough.

    Starting at the bottom, lift the cling film and roll the dough over on itself.

    Pull back the cling film and continue rolling until the dough is in a nice log. Pop back in the freezer for 10 minutes.

    When you're ready to bake your cookies, preheat the oven to 180'C. Unwrap the log of cookie dough and use a sharp knife to cut the log into cookies.

    Place the cookies on a baking sheet.

    Bake for 15 minutes and then munch. They taste great dipped in coffee!
