A simply gnocchi dish with basil, veggie chicken, mozzarella, mushrooms and sun-dried tomatoes
Bring a pan of water to the boil and begin cooking the gnocchi. Meanwhile, chop the garlic and fry until golden with a little olive oil.
Chop the mushrooms and add to the frying pan, along with the Quorn roast chicken slices.
Fry until softened.
Add the basil, sun-dried tomatoes, mozzarella and gnocchi. Fry for just a few minutes until the gnocchi has turned golden.
Season with salt and pepper and serve with a drizzle of olive oil and sprinkling of dried herbs.
