These days quinces are rarely used in cooking. It's a shame because this tasty fruit allows for excellent recipes, at the cost of a little work. In addition one can easily find along the roads quince trees whose fruits are not picked up and which can be kept for at least a few weeks. I propose this time a recipe for quince jelly.

Prepare the quinces : wash, peel and cut the quinces into slices. Cook the quinces with water and lemon :(10 cl of water/ 1kg of quinces and a few drops of lemon juice) until they are tender .
In a saucepan, combine the strained quince water and the sugar. Boil on moderate heat and test the setting of the jelly by putting a few drops on a cold plate. When the jelly is ready, pour in glass jars.
