You can make the cake or use a bought one.
You can use the juice from the cherries to drizzle onto the sponge cake.
Cut the cake into layers.
Make the cream...
Mix water & gelatine together.
Allow to sit for 1 min.
Heat the gelatine mixture in the microwave for 1 min.
Stir to dissolve the gelatine.
Set aside to cool to room temp.
Whip cream, icing sugar & vanilla together.
Add the gelatine mixture to the cream mixture in a steady stream.
Don't over mix.
Stack the cake cherries & cream in layers.
Decorate the top of the cake with chocolate, cream & cherries.
Cut & serve.
