Purple sweet potatoes, blueberries, oat bran, and Greek yogurt, pack these muffins full of anti oxidants, fiber, and protein. They come out just beautiful, and taste delicious.

You Will Need (12 things)

  • 1 cup Blueberries
  • 1 cup Oat Bran
  • ¼ cup Protein Powder
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 cup Cooked, Mashed Purple Sweet Potatoes
  • ¾ cup Xylitol, Erythritol or Coconut Sugar
  • 4 tsp Vanilla Extract
  • 2 cup Greek Yogurt
  • 4 Egg Whites (1/2 cup)
  • 3 Eggs

Steps (5 steps, 30 minutes)

    Cook your Sweet Potatoes ahead of time. Mash them and save them for the recipe.

    Preheat oven to 350 degrees. Mix all the dry Ingredients together in a medium large bowl. In a separate bowl, mix sweet potatoes, eggs, egg whites, Greek Yogurt, and vanilla. Blend well. Add dry ingredients and mix well.
    Add Blueberries and stir to mix evenly.

    Pour into muffin pans, filling the muffin cups 90% full (you will need 24 muffin cups in all). These are not high risers, but are delicious none the less.

    Bake for 20-25 minutes
