Sort the different flowers and foliage into separate piles and strip off all leaves that will be below the binding point (see tip, below). Hold the stem of a large flower, such as an allium, in your hand at the binding point and arrange a stem of each different foliage and flower around it.
Add 1 stem of each flower and foliage in turn (so that no varieties sit together), inserting each at an angle into the bunch at the point where your thumb rests, so the end of the stem points towards you and the flower head points away. This helps to create a spiral stem effect. Twist the bunch round slightly in one direction in your hand before adding the next stem.
Intermittently, look at the top of the bouquet to check you like the arrangement of blooms and adjust them slightly if necessary. Arrange the last two layers of flowers and foliage a little lower around the edges to create a domed effect.
Tie the bunch at the binding point with garden string or twine secured in a knot.
Using secateurs, trim the stems at an angle so they are the same length and can all sit in water. The flowers will last for five days if you change the water every day. insider tips • Lilac is woody, so split the stems with secateurs before you arrange them. • Use a medium binding point for this design so the arranged flowers will look fairly loose; hold each stem about 12cm (5in) below the flower head.
