Mix a Punchy McPunchface cocktail with BATCH in Peckham Rye, London
Named after NERC’s failed attempt at engaging the public in its recently launched ocean research science vessel, the cocktail now shares the name with one of the on board remote operated model! The flavour profiles hails from the piná colada family but is extra smooth because of the milk clarifying process and whiskey base.

  • Step 1

    Method:

    Add all the ingredients apart from the milk to a single jug, Leave the chili to steep stirring and tasting until the mixture has enough heat, Strain out the chilli fragments and slowly add the milk to the mixture while gently stirring.

    Use coffee filters to filter out the resulting kernels.

    This will last for up to 4 - 5 days in the fridge but re pasteurising the mixture in a sous vide extends its life considerably.

  • Step 2

    Serve:

    Stir the mixture down in a mixing glass over ice and add to a chilled Nick & Nora glass.

    Drip a few drops of cardamom bitters over the top and garnish with a dehydrated pineapple slice.
