Potato Leek Soup

Yummy vegetarian soup!

Seen here with a wonderful grilled cheese, tomato, and avocado on sourdough (recipe to be added later), this attempt at making something akin to potato leek soup was super easy and delicious! Make sure to allow for some prep time as the leeks need to soak a while to clean.

You Will Need (3 things)

  • 2 large Potatoes
  • 2 cup chopped Leek
  • Heavy Cream

Steps (13 steps, 30 minutes)

    So, first, go ahead and slice up your leeks, and then cut them into chunks.

    Then, let them soak in a bowl of cold water for about five or ten minutes.

    When there's only a few minutes of soaking left, head up some oil in a pot or deep pan.

    Then, drain and rinse the leeks.

    Add them to the oil and cook them on a medium-low heat for a while. You don't want to carmelize them, just make them tender.

    While that's going, dice up some potatoes.

    And boil them. We basically made our soup base out of really creamy mashed potatoes and it worked great.

    Drain the potatoes, reserving some of the water (you'll need it later), and then get to mashing.

    Add a generous splash or two of heavy cream. Yes, we used whipping cream- it's what we had on hand and it was delicious, so shush.

    Now, since you don't want to use TOO much cream, as it will make the soup too rich, go ahead and make up the difference with that reserved potato water from earlier.

    Until you get something that looks roughly like this. (I think she added a sprinkle of cheese too, but don't quote me on that).

    Then, add your nice tender leeks to the potatoes, and mix it all up. Be generous with the salt and pepper, and Hell, if you want to add some cheese, go for it!

    Here's the finished product, served up with that yummy sandwich I mentioned before!
