Step 1
Heat oven 175 degrees.

Combine all base ingredients together.

Press into a tin.

Bake for 10 mins.
Step 2
Combine the cream cheese & egg yolks.
Step 3
Add condensed milk.

Stir through.
Step 4
Add the pineapple.

Stir through.
Step 5
Fold in 3/4 cup of coconut.
Step 6
Pour over the base.
Step 7
Top with remaining coconut.

Bake for 45 mins.
Step 8
Add cherries on top.

Allow to cool.

Refrigerate overnight.
Step 9
Cut & serve.
