Simple, versitle, and delicious fresh dip or condiment.
Pico de gallo means 'peck of the rooster' in Spanish and the name refers to the fresh ingredients. It works great as a dip for chips and is my favorite as a condiment for homemade chili. This would be an excellent, easy-to-make dip for holiday parties. A few small jars of this would make excellent last minute Holiday gifts.

This fresh dip will keep around 3 days if kept refrigerated.

You may need 6-8 tomatoes.

  • Step 1

    Combine all ingredients and fold to mix. You can eat this right away, but is best when allowed to rest in the refrigerator for at least 1 hour.

  • Step 2

    Ingredients can be mix in any ratio to your tastes. Any infinite substitutions can be used.

    Fruits like watermelon, mango, strawberry, peach, or green apple, or vegetables such as finely chopped cabbage, green onion, bell pepper, cucumber or carrot.

    Substitute lemon juice for any citrus or vinegar. Mint, oregano, ginger, or parsley for cilantro.
