This was one of the tastiest pizzas we've ever made. Tom even said, "if we were served this, we'd come here every night" Makes 2 pizzas, serves 4!
Make the dough by sieving the flour and salt into a large bowl. Stir the yeast in to a jug with the warm water and olive oil until it has dissolved. Make a well in the middle of the flour and pour the water in to the middle, using a fork to combine the mixture in to a thick dough. Knead the dough until smooth before covering and leaving to rise for an hour.
Meanwhile, peel and chop the sweet potato in to thin slice. Spread out on a baking tray, drizzle with olive oil and sprinkle with paprika. Bake in an, along with the portabella mushrooms oven set to 200"C for 15 minutes until golden.
When the dough is ready, stretch it out for two pizzas on to two baking sheets and dust the crusts with cornflour. Spread the base with tomato sauce and pesto before sprinkling with cheese. Place the sweet potato evenly around the pizza. Slice the mushrooms, sun-dried tomatoes and olives before sprinkles on top. Crush the macadamia nuts and sprinkle on top. Bake in an oven for 15 minutes at 180'C before serving hot!
