A super quick and tasty lunch.
Beat together the eggs, 1 tbsp of parmesan cheese and the herbs.
Heat up a frying pan and melt the butter.
Pour in your omelette mixture and cooking for a minute or two until firm on the bottom.
Flip the omelette over and spread with the pesto and sprinkle on the rest of the parmesan.
Cook for another minute, fold over and serve. Enjoy!
