In Carinthia, a part of Slovenia where I come from, we like to make dumplings filled with almost everything. But the best known are Dried pear filled dumplings - called kvočevi nudlni or kločevi nudlni.
In Carinthia, a part of Slovenia where I come from, we like to make dumplings filled with almost everything. But the best known are Dried pear filled dumplings - called kvočevi nudlni or kločevi nudlni.
Here are all the ingredients.
Mix all dough ingredients to make a smooth dough.
Put it aside for at least 30 minutes.
Cook dried pears in water and drain.
Chop into small pieces.
Mix bread cubes with the egg and sugar. And mix everything with pears. The batter should be very thick.
Roll dough as thinly as possible, about 2-3 millimeters or as thin as you can, place little balls of filling onto it, about an inch apart, until half the dough is covered.
Cover the filled part of the dough with the unfilled one.
With a knife, slice between the rows of filling and with your fingers or with a fork seal the edges of the newly-made dumplings.
Cook for 15 - 20 minutes in lightly salted water. When done, drain the dumplings and pan-fry with lard (for a more savoury version) or breadcrumbs, butter, sugar and cinnamon (for a sweet version) for a few minutes. Serve immediately.
