Nice and easy to make.
Can be made ahead and reheated.
Heat coconut oil, cook chicken, garlic & ginger together.
Add coconut milk, soya sauce, brown sugar, lime juice and chilli.
Bring to a boil then simmer for a few mins.
Add peanut butter.
Stir to combine.
Allow to simmer and thicken slightly.
Serve with rice, noodles or chips.
