What is a subsitute for the shortening?

I love peanut butter biscuits so I'm definitely going to give this a try!! Looks quite delish!

I work at a bakery and we make whoopie pies where the outsides are different flavors (like pumpkin or strawberry) but I never thought of changing the INSIDE! Awesome.

We make these at my work, actually I am pretty much the unofficial whoopie pie butter master lol.

Did you get the idea from a Corner Bakery or is this a common treat that Im just not familiar with?

P.S.
Using a rubber spatula and smooshing the butter against the side of the bowl really gets everything nicely mixed together and makes your filling super soothe

Also using whipped-butter instead of shortening delivers a bit more fluff.

Did you get the idea of these from bakerella? I love them, have to try them myself sometimes
