Pan Cooked Upside Down Pineapple Cake

A very easy to make cake/pudding and saves money by cooking in a frying pan on the stove top rather than in the oven.

You Will Need (13 things)

  • Sponge :
  • 4 oz Margarine
  • 4 oz Caster Sugar
  • 4 oz Self-Raising Flour
  • 2 large Egg(s)
  • 1 tbsp Milk
  • 1 tsp Vanilla Essence
  • Topping :
  • 1 ½ oz Butter
  • 1 ½ oz Light soft Brown Sugar
  • 15 oz can Pineapple rings
  • 4 glace Cherries
  • An 8" Frying Pan

Steps (4 steps, 60 minutes)

    Melt butter for the topping in the pan over a medium heat and add the sugar then arrange the pineapple rings in the pan with a whole cherry in the middle of the centre ring and half a cherry in the centres of the rings around the edge. Take off of the heat while you make the sponge mixture.

    Put all the sponge ingredients in a bowl and stir together. Beat the mixture for 1 minute to incorporate some air. Carefully spread the mixture over the pineapple rings then cover the pan with a lid or a piece of kitchen foil.

    Turn the hob down to its lowest setting and cook the sponge slowly, moving occasionally so that all the base of the pan comes into contact with the heat at some time. It should take about 45mins to cook.

    When it feels springy to the touch, loosen the mixture from around the edge of the pan and turn it out onto a plate. Really nice served hot or cold with ice cream or cream!
