Description

These were one of the treats at my Paddington Bear afternoon tea. Each passenger got a mini suitcase filled with four cookies.

Instructions

  1. Small 2018 01 22 212812 img 3144

Whisk together the flour, light brown sugar, baking soda, salt, cinnamon, ginger and nutmeg.

  2. Small 2018 01 22 212815 img 3145

Add the butter and crumble into the mixture.

  3. Small 2018 01 22 212820 img 3150

Add the golden syrup and mix into a dough.

  4. Small 2018 01 22 212827 img 3155

Roll into a ball, cover in cling film and refrigerate for two hours.

  5. Small 2018 01 22 212854 img 3533

Roll out the dough with a rolling pin to 1/2 cm thick.

  6. Small 2018 01 22 212903 img 3535

Use a small square, or toast shaped, cookie cutter to cut as many pieces of toast as you can. Then roll out the remaining dough and repeat.

  7. Small 2018 01 22 212910 img 3538

Line up on a baking tray covered in baking paper.

  8. Small 2018 01 22 212915 img 3539

Bake at 150'C for 15 minutes until golden.

  9. Small 2018 01 22 212921 img 3542

Once cooled, spread one toast cookie with marmalade and another with white chocolate spread.

    Sandwich together.

Repeat for the rest of the tray.

To serve, I made tiny suitcases out of cardboard to put them inside.
