These were one of the treats at my Paddington Bear afternoon tea. Each passenger got a mini suitcase filled with four cookies.
These were one of the treats at my Paddington Bear afternoon tea. Each passenger got a mini suitcase filled with four cookies.
Whisk together the flour, light brown sugar, baking soda, salt, cinnamon, ginger and nutmeg.
Add the butter and crumble into the mixture.
Add the golden syrup and mix into a dough.
Roll into a ball, cover in cling film and refrigerate for two hours.
Roll out the dough with a rolling pin to 1/2 cm thick.
Use a small square, or toast shaped, cookie cutter to cut as many pieces of toast as you can. Then roll out the remaining dough and repeat.
Line up on a baking tray covered in baking paper.
Bake at 150'C for 15 minutes until golden.
Once cooled, spread one toast cookie with marmalade and another with white chocolate spread.
Sandwich together.
Repeat for the rest of the tray.
To serve, I made tiny suitcases out of cardboard to put them inside.
