You will need

1 cup Plain Flour Sifted 1 cup Icing Sugar Sifted 1 Orange(s) Zested Non Stick Cooking Spray 3 tbsp Polenta 1 cup Reduced fat Margarine

This super quick and super easy recipe is low I'm fat and I think the polenta is something a lil different to the norm. Give it a try

Instructions

1. Preheat oven to 180°C. Spray 2 baking trays with oil.

2. 

   Using an electric mixer or by hand, beat spread, orange zest and sugar until just combined. Stir in polenta and flour.

3. 

   Drop spoonfuls of mixture on baking trays. Press lightly with a fork to flatten into small rounds. Bake for 15 minutes, until firm to the touch. Dust with extra icing sugar, if desired.
