In the Mood for Healthy Food
I’m a big fan of porridge/oatmeal, especially during the colder months, and I’m always after new ways to serve it. This blew me away when I first made it. I didn’t quite expect the slightly nutty, creamy, almond milk, fragrant orange blossom and distinctive-flavoured pistachio nuts to work so well in a porridge/oatmeal – I do know what I’m doing … honestly. If it hadn’t been so filling, I’d have gone in for a second serving. The rose petals are optional, but not only do they look pretty, they also add a mildly floral flavour to this divine dish.

  • Step 1

    Put the oats, flaxseed and almond milk in a non-stick saucepan and gently bring to a simmer over a medium heat. Cook, stirring occasionally, for 4–5 minutes until the oats are tender and creamy. If the porridge/oatmeal is too thick, add a little more milk, as needed. Stir in the orange blossom water. Different brands vary on strength, so add a little at a time – you are after a subtle flavour, not anything too overpowering.

  • Step 2

    Spoon equally into bowls, scatter over the pistachios and add agave syrup or honey to taste. Finish with a sprinkling of rose petals, if using, and serve straight away.

    P.S.
    If you don’t have any orange blossom water, a little grated orange zest can be used instead. You will get a very different flavour – but it’s still very tasty. Or sticking to a floral theme, a little rosewater can be added, if you happen to have any.
