Oatmeal & Raisin Cookies
These cookies are firm & crisp around the edge but soft & gooey in the middle.
Heat oven 190 degrees.
Cream the butter & sugars together.
Add the egg & vanilla.
Add the flour, cinnamon, salt & Bicarb.
Stir until just combined.
Fold in the oats & raisins.
Do not over mix.
Spoon tbsp size balls onto a tray.
Bake for 9-10 mins until golden around the edge but soft in the middle.
Cool & serve.
