Description

Perfect for a busy evening, this delicious and absolutely simple one-pot pasta with fresh and fragrant Basil and crunchy black olives is ready in under 20 minutes.

Instructions

  1. Blend the can of diced tomatoes and garlic together in a food processor until the lumpy bits are broken down.

  2. In a large pot, pour the 2 cups of water and the blended tomatoes and garlic and let the mixture come to a boil.

  3. When the tomato sauce mixture has come to a boil, throw in the pasta.

  4. While the pasta is cooking, prepare the black olives by removing the pits (if you bought the ones with the pits still in them) and cutting each into roughly 3-4 slices.

  5. Half of the basil will be cooked together with the pasta, while the other half will be used as a garnish when serving. Halfway through the cooking time of the pasta, add the olives and basil in with the pasta and let cook until the pasta is al dente.

  6. Just before turning off the fire, season the sauce with the 2 tablespoons of sugar and 2 teaspoons of salt (feel free to tweak to your personal preference).

  7. Serve with the remaining basil.
