Leave all ingredients out to reach room temp before starting this recipe. Pretty easy to make. You can add the sour cream topping, leave it off or you can use a fruit topping of your choice.

Instructions

    Heat oven 475 / 240 degrees. Line tin with grease proof paper on the inside & foil on the outside. Mix all base ingredients together.

    Press into a pan. Set aside.

    Cheesecake filling... Mix cheese, sugar, sour cream & vanilla together.

    Beat eggs together in a separate bowl.

    Add eggs to cheese mixture. Stir until just combined.

    Pour over the base.

    Place in a water bath. Bake at 475/240 degrees for 12 mins then reduce the temperature to 350 / 180 degrees & cook for approximately 50 mins to 1 hr.

    Allow to cool.

    Topping... Combine sour cream & sugar together.

    Pour over the cheesecake & refrigeratorate for atleast 4 hrs before cutting.
