Wash your mushrooms and get them ready to slice
slice them once you have your 5 cups grab a saucepan
pour the chicken broth in the saucepan and set it to medium heat. place the onion and thyme (i didn't have any onion nor thyme so i just used garlic powder) cook until tender. I recommend you to be constantly moving.
once the mix is ready pour into a blender or food processor and blend leaving a few chunks of mushrooms.
In the same saucepan melt the butter and add the flour, whisk it until well mixed and then add the half and half (again i didn't have any half and half so i used 3/4 cup of regular milk and 1/4 cup of sour creme), add the rest of the ingredients except the puree. keep stirring and add the mushroom puree, mix and stir, bring to a boil and keep stirring, cook until the desired thickness is achieved.
Serve and enjoy with some crackers if you wish :)
