Mud hen bars
Nice & tasty.
Biscuit base with chocolate & marshmallow filling, topped with Meringue.
Heat oven 175 degrees.
Cream butter & sugar together.
Add vanilla, one whole egg & 2 egg yolks.
Stir to combine.
Add flour, baking powder & salt.
Spread into a tray.
Sprinkle the chocolate chip over the batter.
Sprinkle over the marshmallows
Whisk the 2 egg whites together until stiff peaks.
Add the brown sugar & whisk again.
Pour over the marshmallows.
Bake for 30-35 mins.
Allow to cool.
Cut & serve
