Mock Risotto

An inexpensive side dish.

I had very limited resources in my kitchen cabinet, so I decided to make this rice dish that resembles risotto.
It was very tasty, and I ended up eating it with cheesy vegetables the next day as well.

You Will Need (7 things)

  • 3 cup uncooked, white Rice
  • 6 cup hot Water
  • 3 larger Chicken Boullion cubes
  • 6 tbsp butter or Margarine
  • can Cream Of Mushroom Soup
  • 1/4 c Peas
  • 2 tbsp dried Onion(s)

Steps (6 steps, 80 minutes)

    Put rice in big casserole dish, add mushroom soup...stir, and then spread evenly in dish.

    Dissolve the boullion cubes in the hot water, and then pour over rice mixture.

    Sprinkle dried onion and a little salt & pepper over the rice. Put about 6 Tbsp (in 6 different chunks) over the rice mixture.
    *They will most likely float, but you will stir it later anyway.

    Cook at 350F for about 30 minutes, then take out and stir. Put back in the oven for about another 30 minutes.

    Take out and add peas, and stir again. Put back into the oven for about 10-20 more minutes until rice is done and water is absorbed.

    Let cool. Add a bit of salt and pepper on top...eat!
