You will need an ice cream machine to make this recipe. It tastes brilliant. You can add more or less mint to give it a stronger flavour.

You will need

2 Eggs 3/4 cup Sugar 2 cup Heavy Cream 1 cup Milk 1 tsp Mint Extract Green Food Colouring A few drops 6 oz Chocolate Chips

Instructions

1. 

   Whisk the sugar & eggs together until pale.

2. 

   Add the cream & milk. Stir to combine.

3. 

   Add the mint extract & colouring. Stir to combine.

4. 

   Pour into the ice cream machine. Churn for 1 hr.

5. 

   Remove ice cream into a box & add the chocolate chips. Stir through.

6. 

   Serve.
