Microwave Sea Salt Pralines

I don't like nuts (plus I didn't have any...) so I made plain pralines topped with sea salt because everything tastes better with sea salt. This is quick and easy BUT be careful not to burn the mixture. My first batch was like plasma and did not smell so nice. You need: 1 1/2 cup brown sugar 2 Tbsp butter (or margarine) 2/3 cup heavy cream 1 Tsp Vanilla Extract Sea Salt - as a topping, not mixed in.

Instructions

  1. Combine the sugar, cream, and butter in a microwave safe bowl. Stir sugar and cream together .I left the butter as a cold chunk. Place in microwave. The directions I saw said 9 minutes, which burned in my microwave. I recommend that, after it has been in there for 7-7.5 min, start checking it every 30 seconds to make sure there was no visual sign of burning or any smell. It is better to microwave it less than more. Just make sure it gets to a good boil. I stirred only once about halfway through the cooking.

  2. One you think it is done cooking, remove from the microwave and let it sit for a minute. Add the vanilla and stir for 3 minutes. Drop spoonfuls onto a buttered sheet of wax paper. Dust pralines with the salt. The coarseness is up to you. This batch had a finer dusting. I didn't want it too coarse because I didn't want to be chomping on chunks of salt. Whatever makes you happy :-P
