Super quick and easy Mexican Spiral Appetizers

These were a big hit a potluck brunch yesterday so I thought that I would share them with everyone here.

It was inspired by this recipe:

I didn't have all of the ingredients for that recipe so I made substitutions:

Prep time about 10 mins, freezing time 10 mins baking 10-12 mins.

You Will Need (8 things)

  • 1 pkg 8 oz Cream Cheese
  • ½ cup Sour Cream
  • ½ cup Shredded Mexican Cheese Blend
  • 1 tsp ground Coriander
  • 1 tsp Red Pepper Flakes
  • ½ tsp Mexican Seasonings (equal parts garlic powder, onion powder, cayenne pepper, chili pepper and salt - can be used in all sorts of Mexican dishes or vegetables to add a little zing)
  • 1/2 pkg 12 oz frozen pre-packaged popcorn Chicken
  • 1 pkg 8 oz pkg 10 flour Tortilla Bread

Steps (3 steps, 40 minutes)

    Put the Cream Cheese in a microwave safe bowl and put on defrost for 1 min to soften it, then add sour cream and all of the spices then blend, then spread the mixture equally on the tortillas.

    Thaw 1/2 pkg popcorn chicken on a microwave safe plate then cut in 1/2 and 1/4 pieces. Sprinkle the chicken on the tortillas (I divided it among 8 tortillas and left two tortillas w/o chicken for those that don't like chicken) then roll up and put in the freezer for 10 mins to make them hard enough to easily cut into spirals. Put the spirals in a baking dish.

    Bake at 375 degrees for 10 to 12 mins and serve.

    They are good with salsa and sour cream, but several people liked them just plain.
