Low in at but full of taste
I love Mexican foods so this is my take on a salad I love. And added bonus is that it's low in fat :D
Place cumin and chilli in a bowl. Sprinkle over each side of the pork. Preheat a chargrill on medium. Spray with the oil. Cook the pork for until cooked to your liking I normally cook for about 3-4 minutes each side. remove from pan, Cover with foil and let rest for 3 minutes
Whilst cooking pork heat another non-stick frying pan over high heat. Spray with oil. Cook corn until golden. Add the tomato, shallot and beans and cook, stirring occasionally, until tomato just starts to soften. Add lime juice and chopped coriander.
Slice the pork. Divide corn tomatoe etc among plates, Top with pork and avocado. Season I taste . Top with fresh coriander.
