El Dia De Los Muertos
Sugar cookies with icing are a fun treat!
Pre-heat over to 180C and cream together sugar, vanilla and butter until only just combined.
DO NOT WHIP! This adds too much air into your mix and will make your cookies rise and spread!
Sift in all dry ingredients and mix until combined.
DO NOT OVERMIX! this will start the overwork the gluten in the flour!
Roll out mix (no need to chill) to around 5mm and cut out your shapes with a skull cookie cutter. Then bake for around 10-12 minutes making sure they do not brown on top and are only just done.
Decorate with royal icing and then chill in fridge!
