Mascarpone Chocolate Cheesecake
This is a little bit different.
You don't have to cook the cheesecake in a water bath.
Heat oven 325 /165 degrees.
Mix the Biscuits & butter together.
Press into a tin.
Bake for 8 mins.
Leave aside & cool while you make the filling.
Reduce the oven temp to 300/150 degrees.
Mix the cream cheese & mascarpone cheese together.
Add the sugar to the cheese mixture & combine.
Add the cream & vanilla.
Stir to combine.
Mix a spoon full of the cheese mixture into the melted chocolate.
Mix the chocolate into the remaining cheese mixture.
Stir til combined.
Add the eggs one at a time & stir well.
Pour cheesecake mixture over the base.
Bake for 1 hr.
Turn off oven & let the cheesecake cool in the oven for 1 hr.
When totally cool place in the fridge for atleast 2 hours.
Heat cream, add the chocolate.
Let stand for 1 min & stir until the chocolate is melted & combined.
Pour over the cheesecake & allow to set.
Cut & serve.
