Description

Great as a snack these little parcels of joy are easy to make and so tasty! Best served warm so the cheese is gooey and the pastry has a crunch.

Instructions

  1. Preheat the oven to 200°C. Start with the filling. Put a little bit of oil into a frying pan over a medium heat, add the chopped onion and fry until soft and translucent. Once cooked remove from heat, place in a large mixing bowl.

  2. In the same pan fry off the chorizo. Remove this from the heat once cooked and add to the bowl with the onions.

  3. Add the chicken, cheese, parsley and chive to the bowl of chorizo and onion and give it a good mix. Season with salt and pepper.

  4. To assemble grab the filo pastry and the melted butter. Lay 2 sheets of filo onto the surface and cut it into 3 rectangles. Brush with the butter and add a spoonful of mixture to one end of a rectangle.

  5. Fold the pastry once over the filling to form a triangle. Flip the triangle up and then to the right, then to the left. Continue for the whole rectangle to build the pastry layers. on the last fold seal it with butter. then coat the triangle with butter and place on baking tray. Repeat until all the filling is used up.

  6. Place in the oven for 10-15 minutes until pastry is golden and crisp. Serve warm. You can substitute different cheeses if you prefer cheddar or red leister. Make it your own!
