Malted Silk Pie

You Will Need (13 things)

  • Crust Ingredients :
  • 250 g pack chocolate malted milk Biscuit(s)
  • 75 g Butter plus a bit more to grease pie dish
  • 135 g pack Maltesers
  • Filling Ingredients :
  • 100 g Butter
  • 175 g Sugar
  • 1 pinch Salt
  • 1 tbsp heaped good quality unsweetened Cocoa Powder
  • 2 tbsp (or 1 individual serving packet) Horlicks or other Malt Powder
  • 1 tsp Vanilla Extract
  • 3 large fresh Egg(s)
  • More Maltesers to decorate

Steps (7 steps, 40 minutes)

    Grease a 9 inch pie plate.

    Crush biscuits with food processor or pulverise with rolling pin , pestle or similar to make crumbs. Melt the butter and mix thoroughly into biscuit crumbs. Chill until firm.

    Pour Maltesers into base.

    Using a hand blender on high setting, mix softened butter, sugar, salt, cocoa, vanilla and malt powder for a full 5 minutes until smooth, light and fluffy.

    Using hand blender on medium low setting, add the eggs one at a time, blending after adding each egg. Take it carefully as you want these fully incorporated into the mixture, but if your blender is too powerful the mixture will split. Keep a close eye and stop blending as soon as the mixture looks smooth and fluffy.

    Pour filling into pie crust and smooth top.

    Decorate with a ring of Maltesers round the edge.

    N.B. As this recipe contains raw eggs, use the freshest ones available and eat as soon as possible. Do not serve to small children, the elderly or pregnant women.
