With St Patrick’s Day just around the corner, I wanted to create a fun and playful cupcake recipe that was simple to follow and a perfect addition to the celebrations. The recipe creates a fluffy vanilla cupcake with a vanilla buttercream topping, sprinkles and a hidden golden surprise!

You Will Need (14 things)

  • Cake

  • 200 g Butter
  • 200 g Caster Sugar
  • 4 Egg(s)
  • 1 tsp Vanilla Extract
  • 250 g Self-Raising Flour
  • 2 tsp Baking Powder
  • Green Gel Food Colouring
  • Buttercream and Decoration

  • 150 g Butter
  • 400 g Icing Sugar
  • 1 tsp Vanilla Extract
  • 2 tbsp Milk
  • Colourful Sprinkles

Steps (14 steps, 60 minutes)

    Pre-heat the oven to 190 degrees (fan).

    Cream the butter and sugar.

    Whisk in the egg and vanilla extract.

    Sift the flour and baking powder and fold into the mixture.

  4. 4

    Using a small amount of green gel food colouring, mix thoroughly into the cake mixture.

    Fill 12 cupcake cases to 3/4 full of the green cake mixture.

    Bake for 14 to 17 minutes then allow to cool.

    Cut a small shallow hole from the top of each cupcake. You can also cut of any excess on the top if they are slightly uneven.

    Fill each hole with golden crunch sprinkles.

    To make the buttercream, whisk all the butter for at least 5 minutes. Add the vanilla extract and whisk for a further minute.

    Slowly add the icing sugar through a sift and whisk after each addition.

    Add the milk and whisk thoroughly.

    Put an open star piping nozzle into a piping bag (I used Wilton 1M) and fill with buttercream

    Pipe a classic swirl onto each cupcake.

    Add colourful sprinkles to the top of each cupcake.

    Your cupcakes are now ready to enjoy!
